Brisbane has been at the forefront of a changing food and retail landscape - one where gourmet eateries and experiential retail spaces are thriving.
In the August edition of the alumni newsletter, Luke Fraser, CEO of Howard Smith Wharves and a fellow QUT alumnus, shares his passion for shaping the city's vibrant culinary scene and creating an even better Brisbane.
As guest editor for this edition of the QUT alumni newsletter, I am thrilled to dive into the world of food and retail with you.
Reflecting on my time as a student, I have fond memories of QUT's campus bar, where friendships started over a shared jug of beer and stories that still stand the test of time. Now, through channelling my love of entertainment, dining and connection, I hope to create the same sense of community and connection for others.
I am Luke Fraser, a fellow QUT alumnus and the Chief Executive Officer of Howard Smith Wharves (HSW). HSW holds a unique spot in my heart, as I’m sure it does for many of you who have enjoyed afternoons by the water, dined at a favourite restaurant, and celebrated milestone moments with family and friends.
The world of food and retail has undergone remarkable transformations over the years. From traditional marketplaces to the rise of gourmet eateries and experiential retail spaces, we have witnessed an evolution that reflects changing consumer preferences and aspirations. Brisbane has been a melting pot and meeting place for innovative concepts that cater to diverse palates and unique retail and food experiences.
Howard Smith Wharves is a testament to this. Our heritage listed riverfront precinct is now home to an array of restaurants, cafes, bars, event spaces, and a hotel. The pride of the Wharves lies in the multi-awarded Felons Brewery at its heart, which celebrates the magic of brewing fresh beer, and the freshest local produce.
Sustainability lies at the core of our mission, and I am delighted to see the food and retail industry embracing ethical practices. From sourcing local, organic produce to using eco-friendly packaging, to recycling and waste management, there is an increasing awareness of our collective responsibility to protect the environment.
We have achieved our initial target of diverting 95% of waste from landfill. We do this by segregating 17 different waste streams across our venues, composting over 800kg of waste every day. Our next goal, is to reach 97% and to one day become the most sustainable precinct on the planet.
Central to the food and retail landscape is technology – which we saw rapidly evolve during the pandemic. From mobile ordering and contactless payments to personalised recommendations and virtual shopping experiences, technology has opened new horizons in the way we interact with the food and retail industries. At HSW, we embrace technology to enable our sustainability mission, as well as improving our customer’s experience. The implementation of the order at table platform ME&U has transformed our business and this is just the tip of the iceberg.
Looking ahead, our sights are set on shaping our city’s future as we approach the Brisbane Olympic and Paralympic Games in 2032. Speaking as Queensland President and National Board member of the Property Council of Australia, we have a golden opportunity to ensure that Brisbane becomes an accessible, sustainable, and exceptional destination, and not just during the Games, but leaving a legacy for future generations who will live in this great city.
In this issue, we explore the intertwining worlds of food and retail in a broader context. We'll delve into how our fellow alumni are making strides in the field of sustainable food practices, innovative retail solutions, and eco-conscious endeavours. I hope these stories will inspire us all to make a positive impact, no matter where life takes us.
Brisbane is already kicking goals, but let’s make sure we continue to pave the way for an even better Brisbane—one that continues to excel on the global stage as an exemplar of innovative and thriving food and retail experiences, driven by sustainability and community values.
